30-Minute Seared Salmon with Lemon Orzo

A quick and delicious weeknight meal that brings together perfectly seared salmon and zesty lemon orzo.

  • 2 fillets of salmon
  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a pot, bring the vegetable broth to a boil and cook the orzo according to package instructions until al dente.
  2. Season the salmon fillets with salt and black pepper.
  3. In a skillet over medium-high heat, add olive oil and sear the salmon for about 4-5 minutes on each side until cooked through.
  4. Remove the salmon and set aside. In the same skillet, add minced garlic and sauté for a minute.
  5. Add lemon zest and juice, then stir in cooked orzo, mixing well.
  6. Serve the lemon orzo with the salmon on top, garnished with fresh parsley.
