Amazing Sheet Pan Buffalo Chicken and Sweet Potato Bowls

A delicious and easy recipe for buffalo chicken and sweet potato bowls that can be made all on one pan.

  • 4 boneless chicken breasts
  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup buffalo sauce
  • 2 green onions, chopped
  • 1/4 cup blue cheese, crumbled

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss with olive oil, garlic powder, paprika, salt, and pepper.
  3. Arrange the sweet potatoes on a sheet pan and roast for 20 minutes.
  4. Meanwhile, season the chicken breasts with salt and pepper.
  5. After 20 minutes, remove the pan from the oven and push the sweet potatoes to one side of the pan.
  6. Add the chicken breasts to the other side of the pan and drizzle with buffalo sauce.
  7. Return the pan to the oven and roast for an additional 25 minutes, or until the chicken is cooked through.
  8. Once cooked, let the chicken rest for a few minutes, then slice and serve with sweet potatoes, topped with green onions and blue cheese.

Notes

  • For extra flavor, marinate the chicken in buffalo sauce for an hour before cooking.
  • Feel free to substitute or add other vegetables like bell peppers or broccoli.
