Aromatic Ginger Scallion Chicken Noodle Soup

  • 1 pound boneless chicken thighs
  • 3 tablespoons ginger, minced
  • 4 scallions, chopped
  • 2 garlic cloves, minced
  • 4 ounces egg noodles
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. In a large pot, bring chicken broth to a boil.
  2. Add chicken thighs and simmer until cooked through. Remove and shred.
  3. Add ginger, scallions, and garlic to the pot; cook for 2 minutes.
  4. Stir in egg noodles, soy sauce, and sesame oil; cook until noodles are tender.
  5. Return shredded chicken to the pot and mix well. Season with black pepper.
  6. Serve hot, garnished with fresh cilantro.
