- 1 pound boneless chicken thighs
- 3 tablespoons ginger, minced
- 4 scallions, chopped
- 2 garlic cloves, minced
- 4 ounces egg noodles
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped
- In a large pot, bring chicken broth to a boil.
- Add chicken thighs and simmer until cooked through. Remove and shred.
- Add ginger, scallions, and garlic to the pot; cook for 2 minutes.
