Bacon, Egg, and Potato Hash

A savory mix of crispy turkey bacon, golden-brown potatoes, and perfectly cooked eggs that makes for a delightful breakfast or brunch.

  • 4 cups diced potatoes
  • 6 slices turkey bacon
  • 4 large eggs
  • 1 small onion, chopped
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • salt to taste
  • pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the diced potatoes and cook until golden and tender, about 10-15 minutes.
  2. While the potatoes are cooking, cook the turkey bacon in a separate pan until crispy. Crumble and set aside.
  3. Add chopped onion and bell pepper to the potatoes, cooking until softened.
  4. Push the potato mixture to one side of the skillet, crack the eggs into the empty space and cook to your liking.
  5. Mix in the crumbled bacon, salt, and pepper, then serve hot.

Notes

  • Feel free to add other vegetables like spinach or mushrooms for extra flavor.
  • For a spicy kick, add some diced jalapeños.
