- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup molasses
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup granulated sugar (for rolling)
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, spices, and salt.
- In another bowl, cream together butter and brown sugar until light and fluffy.
- Add molasses, egg, and vanilla; mix well.
- Gradually add dry ingredients to wet ingredients, stirring until combined.
- Roll dough into balls and coat in granulated sugar.
- Place on a baking sheet and bake for 10-12 minutes until edges are set.
- Cool on the pan for a few minutes before transferring to wire racks.
Notes
- For chewier cookies, do not overbake.
