  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, spices, and salt.
  3. In another bowl, cream together butter and brown sugar until light and fluffy.
  4. Add molasses, egg, and vanilla; mix well.
  5. Gradually add dry ingredients to wet ingredients, stirring until combined.
  6. Roll dough into balls and coat in granulated sugar.
  7. Place on a baking sheet and bake for 10-12 minutes until edges are set.
  8. Cool on the pan for a few minutes before transferring to wire racks.

Notes

  • For chewier cookies, do not overbake.
  • Store in an airtight container for up to a week.
