  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 2 cups fresh blackberries
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add eggs, milk, oil, and vanilla to the dry ingredients; mix until smooth.
  5. Carefully stir in boiling water.
  6. Fold in blackberries.
  7. Pour batter into prepared pans and bake for 30-35 minutes.
  8. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Whip heavy cream until soft peaks form and frost the cooled cake.
