Caramel Apple Cheesecake Bars

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups diced apples
  • 1 teaspoon cinnamon
  • 1 cup caramel sauce

Instructions

  1. Preheat the oven to 325°F (160°C) and line a baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs and melted butter until well combined.
  3. Press the mixture into the bottom of the prepared pan to form the crust.
  4. In a large bowl, beat the cream cheese and sugar until smooth.
  5. Add in the vanilla extract and eggs, one at a time, mixing well after each addition.
  6. Fold in the diced apples and cinnamon.
  7. Pour the cheesecake mixture over the crust and smooth the top.
  8. Bake for 40-45 minutes or until the center is set.
  9. Allow to cool completely before drizzling with caramel sauce.
  10. Chill in the refrigerator for at least 2 hours before slicing.

Notes
