Caramel Apple Cheesecake Bars

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup brown sugar, packed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 cups diced apples
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of the baking pan.
  3. In a separate bowl, beat the cream cheese and brown sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and cinnamon.
  4. Fold in the diced apples and spread the mixture over the crust.
  5. Drizzle caramel sauce on top of the cheesecake layer.
  6. Bake for 35-40 minutes or until set. Let it cool before slicing.
