A creamy and flavorful casserole that combines ground beef, rice, and cheese in a comforting dish perfect for family dinners.

  • 1 cup long-grain rice
  • 2 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked.
  3. Add the rice, beef broth, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir to combine.
  4. Bring the mixture to a boil, then reduce heat to low and cover. Cook for about 20 minutes or until the rice is tender.
  5. Stir in half of the cheddar cheese until melted.
  6. Transfer the mixture to a baking dish, top with remaining cheese, and bake uncovered for 15 minutes or until the cheese is bubbly.
  7. Let it cool slightly before serving.

Notes

  • For extra flavor, add chopped onions and bell peppers when browning the beef.
  • This casserole can be made ahead of time and reheated.
