  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon cream of tartar
  • 1/2 cup sugar (for rolling)
  • 2 teaspoons ground cinnamon (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together pumpkin puree and sugars until creamy.
  3. Add in eggs and vanilla, and mix well.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, salt, and cream of tartar.
  5. Gradually add the dry ingredients to the wet mixture until combined.
  6. In a small bowl, mix together sugar and cinnamon for rolling.
  7. Scoop dough into balls, roll in sugar mixture, and place on baking sheets.
  8. Bake for 10-12 minutes or until edges are golden.
  9. Allow to cool on sheets for a few minutes before transferring to wire racks.

Notes

  • These cookies can be frozen for up to 3 months.
