Chicken and Corn Chowder

Chicken and Corn Chowder is a delicious, creamy soup that’s perfect for any day of the week. This comforting dish combines tender chicken, sweet corn, and hearty potatoes in a rich broth.

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup corn, fresh or frozen
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onions and garlic; sauté until softened.
  2. Add the potatoes, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Stir in the shredded chicken, corn, and thyme. Cook for another 5 minutes.
  4. Remove from heat and stir in the heavy cream. Adjust seasoning to taste before serving.

Notes
