2 cups cooked, shredded chicken
1 cup corn, fresh or frozen
2 medium potatoes, diced
1 medium onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon thyme
Instructions
In a large pot, melt the butter over medium heat. Add the onions and garlic; sauté until softened.
Add the potatoes, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender.
Stir in the shredded chicken, corn, and thyme. Cook for another 5 minutes.
Remove from heat and stir in the heavy cream. Adjust seasoning to taste before serving.
Notes
This chowder can be made ahead of time and reheated before serving.
For extra flavor, add a splash of hot sauce or smoked paprika.
