  • 2 poblano peppers, chopped

  • 4 cups chicken broth

  • 1 teaspoon chili powder
  • Salt to taste
  • 2 tablespoons olive oil
  • 1 cup corn (fresh or frozen)
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and cook until translucent.
  3. Stir in garlic, chopped poblano peppers, and cook for an additional 2 minutes.
  4. Add the chicken breasts, broth, diced tomatoes, corn, cumin, chili powder, and salt.
