  • 1 pound chicken breast, cooked and shredded
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 cup frozen peas
  • 1 onion, diced
  • 4 cups chicken broth
  • 1 cup cream
  • 2 tablespoons flour
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened.
  2. Stir in the flour and cook for 1-2 minutes.
  3. Gradually whisk in the chicken broth and bring to a simmer.
  4. Add potatoes and cook until tender, about 10-15 minutes.
  5. Stir in the shredded chicken, peas, cream, turkey bacon, thyme, salt, and pepper. Cook until heated through.
  6. Serve warm, garnished with additional turkey bacon if desired.

Notes

  • For a thicker soup, you can add more flour or let it simmer longer.
