Cider Braised Pork Potatoes Onions

  • 2 pounds beef chuck, cut into chunks
  • 1 pound potatoes, peeled and chopped

  • 2 cups cider
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil

  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the beef and brown on all sides.
  2. Remove the beef and set aside. In the same pot, add the onions and garlic, cooking until softened.
  3. Add the cider and bring to a simmer, scraping up any browned bits from the bottom of the pot.
  4. Return the beef to the pot along with the potatoes, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 2 hours.
