  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork.
  3. Stir in the melted butter until well combined.
  4. Add the baking soda and salt and mix well.
  5. Stir in the sugar, egg, and vanilla extract.
  6. Gradually add the flour and mix until just combined.
  7. In a separate bowl, mix the ground cinnamon and brown sugar.
  8. Pour half of the banana batter into a greased loaf pan.
  9. Sprinkle half of the cinnamon sugar mixture on top.
  10. Pour the remaining banana batter and then top with the rest of the cinnamon sugar mixture.
  11. Bake for 55-60 minutes, or until a toothpick comes out clean.
