Coconut Chicken and Rice

Coconut Chicken and Rice is a deliciously easy comfort dish that brings tropical flavors to your table.

  • 2 cups jasmine rice
  • 1 pound chicken thighs
  • 1 can (13.5 oz) coconut milk
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add minced garlic and grated ginger, cooking for an additional minute.
  3. Stir in the chicken thighs, cooking until browned on both sides.
  4. Add jasmine rice to the skillet, followed by coconut milk and chicken broth. Season with salt and black pepper.
  5. Bring the mixture to a boil, then reduce heat, cover, and simmer for 20-25 minutes until rice is tender and chicken is cooked through.
  6. Fluff the rice and serve hot.

Notes

  • For added flavor, marinate the chicken in coconut milk for a few hours before cooking.
  • Garnish with fresh cilantro or green onions before serving.
