  • 1 rotisserie chicken shredded
  • 4 slices turkey bacon
  • 1 cup mushrooms, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups mixed vegetables
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • salt to taste

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and chop.
  2. Add onions, garlic, and mushrooms to the pot and sauté until tender.
  3. Stir in the mixed vegetables and continue cooking for about 5 minutes.
  4. Add the chicken broth, thyme, pepper, and salt. Bring to a boil.
  5. Add the shredded rotisserie chicken and cooked turkey bacon. Reduce heat and simmer for 20 minutes.
  6. Adjust seasoning as needed and serve hot.
