Ingredients

  • 1 pound penne pasta
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions.
  2. In a large skillet, heat olive oil over medium heat and add the chicken, seasoning with Cajun spices. Cook until browned and cooked through.
  3. Remove chicken and in the same skillet, add heavy cream, Parmesan cheese, and garlic powder, stirring until combined.
  4. Add cherry tomatoes and spinach to the sauce, and simmer until the spinach is wilted.
  5. Slice the chicken and add it back to the skillet with the pasta, mixing everything together.
  6. Season with salt and pepper to taste, and serve hot.

Notes

  • For a spicier kick, add more Cajun seasoning.
  • This dish can be made in under 30 minutes for a quick weeknight meal.
