Creamy Parmesan Italian Sausage Ditalini Soup Recipe

  • 1 pound Italian sausage
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add diced onion and garlic, sauté until onion is translucent.
  3. Pour in chicken broth and add diced tomatoes, bring to a simmer.
  4. Add ditalini pasta and cook until al dente.
  5. Stir in heavy cream and Parmesan cheese until melted and combined.
  6. Add fresh spinach and cook until wilted.
  7. Season with salt and pepper to taste, then serve hot.

Notes

  • For a thicker soup, reduce the amount of chicken broth.
  • Leftovers can be reheated, but the pasta may absorb too much liquid.
