Ingredients

  • 2 pounds potatoes
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 cup chopped turkey bacon
  • 1/2 cup diced chicken ham
  • 1/4 cup chopped green onions
  • 1/4 cup chopped celery
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons apple cider vinegar

Instructions

  1. Boil potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. Once cooled, peel and cut the potatoes into bite-sized pieces.
  3. In a large bowl, mix mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
  4. Add the potatoes, turkey bacon, chicken ham, green onions, and celery to the dressing. Stir gently to combine.
  5. Chill in the refrigerator for at least 1 hour before serving.
