Crockpot Chicken Gnocchi Soup

A hearty and delicious crockpot chicken gnocchi soup that is perfect for comforting meals.

Ingredients

  • 1 pound chicken breast
  • 16 ounces gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups spinach, fresh

Instructions

  1. In the crockpot, add chicken breasts, carrots, celery, onion, garlic, thyme, salt, pepper, and chicken broth.
  2. Cook on low for 6-8 hours or high for 4-5 hours.
  3. Once cooked, shred the chicken and return it to the pot.
  4. Add the gnocchi and heavy cream, stir to combine, and cook on high for an additional 30 minutes.
  5. Stir in the fresh spinach just before serving.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
  • For a thicker soup, add more gnocchi or reduce the amount of chicken broth.
