Crockpot Chicken Parmesan Soup

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup uncooked pasta
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Add the chicken broth, diced tomatoes, onion, garlic, and Italian seasoning. Stir to combine.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, shred the chicken in the cooker and stir in the uncooked pasta.
  5. Finish with the grated Parmesan cheese and stir until melted. Season with salt and pepper to taste.

Notes

  • For a creamier soup, add a splash of heavy cream just before serving.
  • Garnish with fresh basil or additional Parmesan cheese if desired.
