- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup uncooked pasta
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Place the chicken breasts in the bottom of the slow cooker.
- Add the chicken broth, diced tomatoes, onion, garlic, and Italian seasoning. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken in the cooker and stir in the uncooked pasta.
- Finish with the grated Parmesan cheese and stir until melted. Season with salt and pepper to taste.
