Crockpot Chicken Tortilla Soup

A delicious and comforting soup made easily in a crockpot.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lime, juiced
  • 1 cup tortilla chips, for serving

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add diced tomatoes, black beans, corn, onion, garlic, chicken broth, chili powder, cumin, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred the chicken with two forks and stir in lime juice.
  6. Serve hot with tortilla chips on top.

Notes

  • For extra flavor, add jalapeños.
  • Top with avocado or cheese for a richer taste.
