Fall Harvest Pasta Salad: 7 Reasons You’ll Crave It

Ingredients

  • 8 ounces rotini pasta
  • 2 cups chopped butternut squash
  • 1 cup dried cranberries
  • 1 cup feta cheese, crumbled
  • 1/2 cup chopped walnuts
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 2 teaspoons maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the pasta according to package instructions; drain and let cool.
  2. While the pasta is cooking, roast the butternut squash in the oven until tender.
  3. In a large bowl, combine the pasta, butternut squash, cranberries, feta, and walnuts.
  4. In a separate bowl, whisk together the olive oil, balsamic vinegar, maple syrup, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
