  • 1 cup pumpkin puree
  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup chopped walnuts (optional)
  • 1/2 cup brown sugar
  • 1/4 cup butter, softened
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon orange zest (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix pumpkin puree, Florida orange juice, and vegetable oil.
  3. Add sugar and eggs, mixing until well combined.
  4. In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If desired, fold in walnuts.
  7. Pour the batter into the prepared loaf pan.
  8. For the streusel, mix brown sugar, flour, and softened butter until crumbly, and sprinkle on top of the batter.
  9. Bake for 60-70 minutes or until a toothpick comes out clean.
  10. While the bread is baking, prepare the orange glaze by whisking together powdered sugar and orange zest.
  11. Let the bread cool before drizzling with the glaze.
