French Onion Chicken Orzo Casserole

A delicious and comforting casserole featuring French onion flavor and tender orzo.

  • 1 cup orzo pasta
  • 4 slices turkey bacon
  • 2 cups chicken broth
  • 1 cup shredded chicken
  • 1 large onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 cup mozzarella cheese, shredded

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the turkey bacon until crisp, then remove and crumble it.
  3. Add olive oil to the skillet and sauté the onions until caramelized.
  4. In a large bowl, combine cooked orzo, chicken, chicken broth, garlic powder, thyme, and half of the cheese.
  5. Fold in the caramelized onions and crumbled bacon.
  6. Transfer to a baking dish and top with remaining cheese.
  7. Bake for 25-30 minutes or until the cheese is bubbly and golden.
