French Onion Soup Mac & Cheese

A delicious blend of rich flavors from traditional French onion soup combined with the comfort of macaroni and cheese.

  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 2 cups macaroni
  • 4 cups beef broth
  • 2 cups shredded Gruyère cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large saucepan, heat olive oil over medium heat.
  2. Add sliced onions and cook until caramelized, about 15 minutes.
  3. Meanwhile, cook the macaroni according to package instructions and drain.
  4. Add the beef broth to the caramelized onions and bring to a simmer.
  5. Add the cooked macaroni and stir in the Gruyère and mozzarella cheeses.
  6. Season with thyme, salt, and pepper, and cook until the cheeses are melted and creamy.

Notes

  • For extra flavor, add a splash of white wine to the onions while caramelizing.
