- 4 ears fresh corn, husked and kernels removed
- 6 slices turkey bacon, chopped
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- In a large skillet over medium heat, cook the turkey bacon until crispy. Remove and set aside.
- In the same skillet, add olive oil and onion. Sauté until the onion is translucent.
- Add garlic and cook for another minute.
- Stir in the corn, salt, and pepper. Cook for about 5-7 minutes until corn is tender.
- Add the crispy bacon back to the skillet and mix well.
- Garnish with fresh parsley before serving.
