Fresh Corn and Bacon Side Dish

A delicious and comforting side dish featuring fresh corn and turkey bacon.

Ingredients

  • 4 ears fresh corn, husked and kernels removed
  • 6 slices turkey bacon, chopped
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large skillet over medium heat, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, add olive oil and onion. Sauté until the onion is translucent.
  3. Add garlic and cook for another minute.
  4. Stir in the corn, salt, and pepper. Cook for about 5-7 minutes until corn is tender.
  5. Add the crispy bacon back to the skillet and mix well.
  6. Garnish with fresh parsley before serving.
