Fresh Cucumber Caprese Salad

Ingredients

  • 2 large cucumbers
  • 1 pound fresh mozzarella cheese
  • 1 cup cherry tomatoes
  • 1/4 cup fresh basil leaves
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt to taste
  • Freshly ground pepper to taste

Instructions

  1. Slice the cucumbers into thick rounds.
  2. Cut the mozzarella into slices or balls.
  3. Halve the cherry tomatoes.
  4. In a serving dish, layer the cucumber, mozzarella, and cherry tomatoes alternately.
  5. Tear the basil leaves and scatter them on top.
  6. Drizzle balsamic vinegar and olive oil over the salad.
  7. Season with salt and pepper to taste.
