  • 1 pound chicken breast, cubed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add cubed chicken breast and season with garlic powder, oregano, salt, and black pepper.
  3. Cook for 5-7 minutes until chicken is cooked through.
  4. In a bowl, combine the cooked quinoa, cherry tomatoes, cucumber, feta cheese, olives, and parsley.
  5. Top the quinoa mixture with the cooked chicken and serve warm.
