  • 1 pound chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup red onion, thinly sliced

Instructions

  1. Marinate the chicken with olive oil, oregano, garlic powder, onion powder, salt, and pepper for at least 30 minutes.
  2. Grill or cook the chicken in a skillet over medium heat until fully cooked.
  3. While the chicken is cooking, prepare the quinoa as per package instructions.
  4. In a bowl, combine quinoa, cherry tomatoes, cucumber, feta cheese, olives, and red onion.
  5. Slice the cooked chicken and serve it over the quinoa salad.
