- 2 cups cooked quinoa
- 1 pound boneless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives
- 2 tablespoons fresh parsley, chopped
- Preheat the grill to medium-high heat.
- In a bowl, mix together olive oil, garlic powder, oregano, salt, and pepper. Rub this mixture on the chicken breasts.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest.
- Slice the chicken into strips.
- In a large bowl, combine the quinoa, cherry tomatoes, cucumber, feta cheese, red onion, olives, and parsley.
- Top the quinoa mixture with the grilled chicken slices and serve.
