  • 2 cups cooked quinoa
  • 1 pound boneless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix together olive oil, garlic powder, oregano, salt, and pepper. Rub this mixture on the chicken breasts.
  3. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest.
  4. Slice the chicken into strips.
  5. In a large bowl, combine the quinoa, cherry tomatoes, cucumber, feta cheese, red onion, olives, and parsley.
  6. Top the quinoa mixture with the grilled chicken slices and serve.
