  • 1 cup pumpkin puree
  • 1/2 cup honey
  • 2 large eggs
  • 1 cup Kodiak pancake mix
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, combine Greek yogurt, pumpkin puree, honey, and eggs.
  3. In a separate bowl, mix Kodiak pancake mix, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
