A delicious and comforting potato soup filled with cheddar cheese, garlic, and herbs, perfect for a cozy meal.

Ingredients

  • 4 medium potatoes, diced
  • 1 block cheddar cheese, grated
  • 4 slices turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  2. Add diced potatoes, chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Using a potato masher, mash some of the potatoes for a creamy texture. Stir in milk and grated cheddar cheese until melted.
  4. Stir in crumbled turkey bacon and heat through before serving.

Notes

  • For a thicker soup, blend a portion of the soup and return it to the pot.
  • Garnish with extra cheddar cheese and herbs if desired.
