High Protein Broccoli Cheddar Soup

  • 4 slices turkey bacon
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 4 cups chopped broccoli
  • 1 cup low-sodium chicken broth
  • 2 cups skim milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add onion and garlic, sautéing until soft.
  3. Add chopped broccoli and chicken broth, bringing to a boil. Reduce heat and simmer until broccoli is tender.
  4. Stir in milk and cheddar cheese until melted and creamy.
  5. Season with salt, pepper, and nutmeg. Stir until well combined.
  6. Serve hot, topped with crumbled turkey bacon.
