Hobo Casserole with Ground Beef & Potatoes – Quick & Delicious!

A quick and delicious comfort food dish made with ground beef and potatoes.

Ingredients

  • 1 pound ground beef
  • 4 cups potatoes, diced
  • 1 cup onions, chopped
  • 1 cup corn, frozen or canned
  • 2 cups cheddar cheese, shredded
  • 1 can cream of mushroom soup
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the onions and cook until softened.
  4. In a large bowl, combine cooked beef, diced potatoes, corn, cream of mushroom soup, garlic powder, salt, and pepper.
  5. Transfer the mixture to a greased baking dish. Top with shredded cheddar cheese.
  6. Bake in the preheated oven for 1 hour or until the potatoes are tender.

Notes

  • For a spicier version, add your favorite hot sauce.
  • This dish can be made ahead of time and reheated.
