  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar, packed

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt; set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add egg and vanilla extract, mixing until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a separate bowl, combine brown sugar and cinnamon. Roll the cookie dough into balls, then roll each ball in the cinnamon-sugar mixture.
  7. Place the dough balls on the prepared baking sheet, spacing them evenly.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Let cool before drizzling with icing.

Notes
