Italian Penicillin Soup Recipe: Comfort Food That Heals

A soothing soup that’s perfect for when you need a little comfort.

Ingredients

  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup pasta of choice
  • salt and pepper to taste
  • 1 cup freshly chopped parsley

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Stir in the carrots and celery, and cook for another 5 minutes.
  4. Add thyme and oregano, and pour in the chicken broth.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add the shredded chicken and pasta, and cook until pasta is tender.
  7. Season with salt and pepper, then stir in the parsley before serving.

Notes

  • For a vegetarian version, substitute the chicken broth with vegetable broth and omit the chicken.
  • Leftover soup can be frozen for future meals.
