Italian Sausage and White Bean Soup

  • 1 pound Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 cans white beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups kale, chopped
  • Grated Parmesan for serving

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add Italian sausage and cook until browned.
  3. Stir in onion, garlic, carrots, and celery, cooking until softened.
  4. Pour in chicken broth and add white beans, thyme, and oregano. Season with salt and pepper.
  5. Bring to a boil, then reduce heat to simmer for 20 minutes.
  6. Add kale and cook until wilted.
  7. Serve hot with grated Parmesan on top.

  • For a spicier soup, use spicy Italian sausage.
