Lemon Ginger Turmeric Chicken and Rice Soup

A warm and nourishing soup made with lemon, ginger, turmeric, chicken, and rice.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon turmeric powder
  • 6 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup brown rice
  • 1 lemon, juiced
  • salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in garlic, ginger, and turmeric, cooking for another minute.
  4. Add chicken broth and bring to a boil.
  5. Stir in shredded chicken and brown rice.
  6. Reduce heat and let simmer until rice is cooked, about 45 minutes.
  7. Stir in lemon juice and season with salt and pepper.
  8. Serve warm with fresh herbs if desired.

Notes

  • For extra flavor, add fresh herbs like cilantro or parsley before serving.
  • You can replace brown rice with quinoa for a different texture.
