Matcha Blueberry Muffins

  • 1/2 cup sugar
  • 1 tablespoon matcha powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with liners.
  2. In a bowl, whisk together flour, sugar, matcha powder, baking powder, baking soda, and salt.
  3. In another bowl, mix buttermilk, vegetable oil, and egg until combined.
  4. Combine the wet and dry ingredients, stirring until just mixed.
  5. Fold in the blueberries gently.
  6. Divide the batter into the muffin liners, filling them about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For an extra flavor kick, consider adding lemon zest to the batter.
  • Feel free to substitute frozen blueberries if fresh aren’t available.
