Mediterranean Lentil Soup

A delicious and nutritious Mediterranean lentil soup that is perfect for any occasion.

  • 1 cup green lentils
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 6 cups vegetable broth
  • 1 can diced tomatoes (14.5 ounces)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  • 2 cups spinach, chopped
  • 2 tablespoons lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté until softened.
  2. Add garlic, cumin, and paprika, and cook for another minute.
  3. Stir in lentils, vegetable broth, diced tomatoes, salt, pepper, and bay leaves. Bring to a boil.
  4. Reduce heat, cover, and simmer for 30-40 minutes, until lentils are tender.
  5. Add spinach and lemon juice, and cook for an additional 5 minutes.
  6. Remove bay leaves, adjust seasoning if necessary, and serve hot.

  • For added flavor, consider garnishing with fresh herbs like parsley or cilantro.
  • This soup can be stored in the refrigerator for up to 5 days.
