Mediterranean Lentil Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups spinach
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery and sauté until soft.
  3. Stir in garlic, cumin, and paprika; cook for 1 minute.
  4. Add lentils, diced tomatoes, broth, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Stir in spinach and lemon juice; cook until spinach is wilted.
  7. Serve hot.
