  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 red onion, thinly sliced
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the sliced red onion and sauté until translucent.
  3. Add the spinach and cook until wilted.
  4. In a separate bowl, mix the feta and mozzarella cheeses.
  5. Lay one tortilla in the skillet, add the cheese mixture, then the sautéed onions and spinach.
  6. Top with another tortilla and cook until golden brown, then flip and cook the other side.
  7. Repeat with the remaining tortillas and filling.
  8. Slice into wedges and serve hot.

Notes

  • For a spicier kick, add some red pepper flakes to the filling.
  • These quesadillas can be made ahead and heated up when ready to serve.
