  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups tomatillos, husked and quartered
  • 2 jalapeños, seeds removed and chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add the beef and brown on all sides.
  3. Remove beef and set aside.
  4. Add onions and jalapeños to the pot, sauté until softened.
  5. Add garlic and cumin, cook for another minute.
  6. Return the beef to the pot, add tomatillos and beef broth.
  7. Bring to a simmer, cover, and reduce heat to low.
  8. Cook for about 2 hours until beef is tender.

Notes

  • Serve with warm tortillas for a complete meal.
  • Adjust the spice level by varying the number of jalapeños.
