Mexican Chicken with Cheese Sauce

A delicious and easy-to-make Mexican chicken dish topped with creamy cheese sauce.

  • 4 boneless chicken breasts
  • 1 cup shredded cheese
  • 1 can diced tomatoes
  • 1 teaspoon taco seasoning
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil and brown the chicken breasts on both sides.
  3. Transfer chicken to a baking dish, top with diced tomatoes and taco seasoning.
  4. Bake in the oven for 25 minutes.
  5. In a saucepan, simmer the heavy cream and cheese until melted and combined.
  6. Pour cheese sauce over the chicken and bake for another 10 minutes.
  7. Garnish with cilantro before serving.

Notes

  • For extra spice, add jalapeños to the cheese sauce.
