Mexican Street Corn Brussels Sprouts

A delicious twist on traditional Mexican street corn using Brussels sprouts and savory turkey bacon.

  • 1 pound Brussels sprouts
  • 4 strips turkey bacon
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 cup cotija cheese
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim and halve the Brussels sprouts, and place them on a baking sheet.
  3. Cook the turkey bacon until crispy, then crumble and set aside.
  4. In a bowl, mix mayonnaise, lime juice, chili powder, and a pinch of salt.
  5. Toss Brussels sprouts with the mayonnaise mixture and spread them evenly on the baking sheet.
  6. Roast in the oven for 25-30 minutes or until crispy.
  7. Remove from the oven and sprinkle with cotija cheese, bacon, and cilantro before serving.

Notes

  • For extra flavor, add more lime juice and chili powder to taste.
