  • 4 ears corn, husked
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • ¼ cup cilantro, chopped
  • ½ cup cotija cheese, crumbled
  • 1 lime, juiced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Slice the corn kernels off the cob and add to the pot.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Stir in the heavy cream, chili powder, cumin, salt, and pepper.
  7. Blend the soup until smooth, if desired.
  8. Serve hot, topped with cilantro, cotija cheese, and a squeeze of lime.

Notes
