Oatmeal Cookie Sandwiches with Cream Cheese Filling

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned oats
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream the butter, brown sugar, and granulated sugar until smooth.
  3. Add eggs and vanilla; mix well.
  4. In another bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, then stir in oats until fully combined.
  6. Drop spoonfuls of dough onto baking sheets and bake for 10-12 minutes until golden.
  7. Let cookies cool completely.
  8. In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
  9. Spread cream cheese filling on the flat side of half the cookies and top with the remaining cookies to form sandwiches.

Notes

  • For a chocolate twist, add chocolate chips to the cookie dough.
  • These sandwiches can be enjoyed immediately but taste even better after chilling in the fridge for an hour.
