- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 3 cups old-fashioned oats
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream the butter, brown sugar, and granulated sugar until smooth.
- Add eggs and vanilla; mix well.
- In another bowl, whisk together flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, then stir in oats until fully combined.
- Drop spoonfuls of dough onto baking sheets and bake for 10-12 minutes until golden.
- Let cookies cool completely.
- In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
- Spread cream cheese filling on the flat side of half the cookies and top with the remaining cookies to form sandwiches.
