  • 4 large russet potatoes
  • 4 slices turkey bacon
  • 1 medium onion
  • 3 cups chicken broth
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup chopped green onions

Instructions

  1. Cook the turkey bacon in a skillet until crispy. Remove and crumble.
  2. Peel and cube the potatoes, then add them to a pot with the chicken broth. Boil until tender.
  3. In another pot, melt butter and sauté onions until soft.
  4. Add cooked potatoes to the onions, along with heavy cream, garlic powder, salt, and pepper. Simmer for 10 minutes.
  5. Use an immersion blender to puree the soup until smooth. Stir in cheese and bacon.
  6. Serve hot, garnished with green onions.
